Southern Biscuits
Ingredients
- 2 cups all-purpose flour
- 1½ sticks cold butter
- 3 tsp baking powder
- ½ tsp salt
- 1 tsp sugar
- ¼ cup or more cold milk
How-to
- Preheat oven to 425°
- Sift flour, sugar and salt together in a bowl
- Cut cold butter into small pieces and add to the flour mixture, and mix quickly with your hands or with a pastry cutter. You want a coarse consistency, with little bits of butter throughout
- Add milk a little at a time until you can form dough. If the dough is too sticky, add a bit of flour
- Once you have a dough, place on a floured board and knead 3 times ONLY!
- Then roll dough out to a thickness of ½" and cut into rounds for biscuits or use as a crust for your favorite cobbler
- Place cut biscuits on an ungreased sheet pan and bake in preheated 425° oven for 10-14 minutes and serve immediately
Chef Ashbell’s’ Tip: Biscuits are quick breads meant to be made and eaten in 20 minutes, so Don’t overwork the dough as in making bread
