S'mores Cupcakes
Makes one dozen
Ingredients
For Cupcakes
- ¾ cup sugar
- ½ cup + 6 tbsp all-purpose flour
- ⅓ cup cocoa powder
- 1 tsp baking powder
- ¾ tsp baking soda
- ½ tsp salt
- 1 large egg
- ½ cup milk
- 4 tbsp butter, melted
- 1 tsp vanilla
- ½ cup boiling water
- 1 (1.5 oz) milk chocolate bar, chopped
For Assembly
- 12 marshmallows, halved
- 4 graham crackers, broken into 12 pieces
- 12 mini milk chocolate bars
- 1 graham cracker, crumbled
Equipment
- standard 12-count muffin tin
- nonstick cooking spray
- 12 cupcake liners
How-to
Make & Bake Cupcakes
- Line muffin tin with cupcake liners and spray the whole tin with nonstick spray
- In a large bowl combine sugar, flour, cocoa powder, baking powder, baking soda, and salt
- In a separate bowl whisk eggs, milk, vanilla, and melted butter. Add the wet ingredient to the dry and combine
- Once combined, stir in the boiling water, mix until fully incorporated and fold in chopped chocolate
- Portion into pan, filling ¾ full. Bake 12 minutes
- After 12 minutes, take the pan out of the oven. Insert ½ of a marshmallow into the center of each partially baked cupcake
- Bake an additional 12 minutes
Decorate
- Upon removing the cupcakes from the oven, you'll notice that there is a cavity where the ½ marshmallow was. Put the remaining ½ marshmallow into this hole
- Insert a piece of graham cracker and chocolate into the marshmallow and top with graham cracker crumbs
