Jean's Mini Cheesecakes
Makes 12 mini-cheesecakes - the recipe can be doubled
Ingredients
- 12 vanilla wafers
- two 8 oz packages cream cheese, softened
- ½ cup sugar
- 1 tsp vanilla extract
- 2 large eggs
- cherry pie filling (or use fruit, nuts - any flavorings of choice)
Special Equipment
- muffin/cupcake tin
- muffin tin liners
- hand mixer
How-to
- Preheat oven to 325º
- Line muffin tin with foil liners
- Place one vanilla wafer in each liner
- Mix cream cheese and sugar with a spoon to combine. Add vanilla extract and mix on medium speed, about 2 minutes
- Add eggs, one at a time, and mix until there are no lumps
- Pour over wafers, filling ¾ full. Cheesecakes will puff up while baking, so do not fill to the top of the liner
- Bake for 25 minutes. Cheesecakes will look almost like muffins, but the top will lower and in fact, will form a little indentation which is perfect for filling
- Let cool in the muffin tins, then remove from pan and chill for a few hours
- Top with fruit, preserves, nuts or chocolate. Be creative! Keep chilled until ready to serve
