Maple Whole Grain Quick Bread
Makes 1 Loaf
Ingredients
For Bread
- 1⅓ cups white whole wheat flour
- 1⅓ cups oat flour
- ½ tsp kosher salt
- 1½ tsp baking powder
- 1½ cups skim milk
- 1 egg
- ⅔ cup pure maple syrup
- 2 tbsp vegetable oil
- 1 cup raisins, chopped (optional)
Equipment
- 9" x 5" loaf pan
- nonstick cooking spray
How-to
- Preheat oven to 350º
- Whisk together dry ingredients in a large bowl
- In a separate bowl, mix together wet ingredients
- Add raisins to the dry ingredients (if using), then make a well in the middle and slowly pour in the combined wet ingredients, while whisking. Don't worry about over-mixing (the oat flour doesn't contain much gluten, so the batter cannot be overmixed)
- Coat 9" x 5" loaf pan with nonstick cooking spray. Spread batter evenly in pan. Bake 60-70 minutes, or until a toothpick can be inserted & removed clean
- Allow to cool at least 10 minutes before removing from pan. Transfer to a cooling rack and cool an additional hour before slicing
- Slice and enjoy! Toast and serve with butter, or try Maria's Maple Cream Cheese Spread
