Cranberry Bread

Serves 8-10

Ingredients

  • 2 cups flour
  • ½ tsp salt
  • 1 tsp baking powder
  • 1½ tsp baking soda
  • 1 cup sugar
  • 1 cup fresh cranberries, cut in thirds (or pulsed in food processor - don't over-process)
  • ⅓ cup orange juice
  • 2 tbsp canola oil
  • 1 egg, beaten
  • ½ cup chopped nuts
  • boiling water

How-to

  1. Preheat oven to 350°
  2. Sift together flour, salt, baking powder, baking soda and sugar
  3. Add orange juice, canola oil and enough boiling water to make ¾ cup of liquid
  4. Add beaten egg as well as chopped nuts and cranberries and mix to combine
  5. Bake in greased loaf pan for 40-45 minutes or until a toothpick comes out clean when inserted into the bread
  6. Slice into 1" slices and enjoy
