Bea's Hermit Cookies

Makes 4½ dozen

Ingredients

  • 3½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ¾ tsp nutmeg
  • 1 tsp cinnamon
  • 2 cups light brown sugar
  • 2 sticks unsalted butter, room temperature
  • 2 eggs
  • ½ cup cold black coffee
  • 1½ cups raisins

How-to

  1. Sift flour, baking soda, salt and spices and set aside
  2. In large bowl or mixer set to medium speed, beat butter and sugar until fluffy. Add eggs and beat until well mixed
  3. At low speed, add coffee slowly.
  4. Slowly add in dry ingredients, about a third at a time
  5. Stir raisins in with a spoon
  6. Cover & refrigerate dough for 45 minutes
  7. Preheat oven to 400°
  8. Line cookie sheets with parchment paper, or lightly grease your pan
  9. Drop batter by rounded teaspoonfuls, 2" apart on sheets.  Bake 8 -10 minutes or until hermits are nicely browned.  Remove to rack, cool and enjoy!
