Bea's Hermit Cookies
Makes 4½ dozen
Ingredients
- 3½ cups all-purpose flour
- 1 tsp baking soda
- ½ tsp salt
- ¾ tsp nutmeg
- 1 tsp cinnamon
- 2 cups light brown sugar
- 2 sticks unsalted butter, room temperature
- 2 eggs
- ½ cup cold black coffee
- 1½ cups raisins
How-to
- Sift flour, baking soda, salt and spices and set aside
- In large bowl or mixer set to medium speed, beat butter and sugar until fluffy. Add eggs and beat until well mixed
- At low speed, add coffee slowly.
- Slowly add in dry ingredients, about a third at a time
- Stir raisins in with a spoon
- Cover & refrigerate dough for 45 minutes
- Preheat oven to 400°
- Line cookie sheets with parchment paper, or lightly grease your pan
- Drop batter by rounded teaspoonfuls, 2" apart on sheets. Bake 8 -10 minutes or until hermits are nicely browned. Remove to rack, cool and enjoy!
