Whole Grain Waffles
Serves 6-8
Ingredients
- 2 cups whole or skim milk (or soy milk)
- 2 eggs
- 2 tbsp maple syrup or honey
- 2 tbsp peanut, walnut or canola oil
- 1 cup white whole wheat flour
- 1 cup oat flour
- ½ cup pecan or almond meal (or other nut meal)
- 1 tsp baking powder
- 1 tsp salt

- waffle iron
How-to
- Preheat waffle iron according to manufacturer's instructions
- Whisk together the wet ingredients in a medium-sized bowl. Combine dry ingredients, then stir into wet until no big clumps remain. [The low-gluten oat flour means you don't have to worry about overmixing]
- Pour batter into waffle iron, close lid and cook according to your waffle iron manufacturer's instructions
- Serve with butter, nuts, maple syrup and/or fruit
