Honey Almond Granola w/ Raisins & Cranberries

Makes 3 lbs of granola

Ingredients

  • 5 cups rolled oats
  • 1 cup sliced almonds
  • ½ cup light brown sugar
  • ¼ tsp salt
  • ½ cup honey
  • ⅓ cup vegetable oil
  • 1½ tbsp vanilla
  • 1 cup dried cranberries
  • 1¼ cups raisins

Special Equipment

  • two 9 x 13" baking pans
  • parchment paper

How-to

  1. Preheat oven to 325º
  2. Combine all dry ingredients except fruit in a large bowl.  Mix by hand until uniform in consistency
  3. Combine wet ingredients in separate bowl, mixing well
  4. Add wet ingredients to dry and rub together by hand
  5. Spread evenly onto 2 sheet pans lined with parchment paper
  6. Bake at 325º for 10 minutes.  Stir.  Continue to bake 5 minutes until golden
  7. Remove from oven and let cool completely
  8. Add dried fruit and mix well

Note - Granola stays fresh about 2 weeks in a bag or container. Or, you can freeze it for later. Just let thaw and you're good to go.
