Sparkling Pomegranate Punch
Recipes for 1 Cocktail or 15 Servings
Ingredients
For Vanilla-Cinnamon Simple Syrup
- 1 cup sugar
- 1 cup water
- 1 cinnamon stick
- 1 vanilla bean pod, split
For 1 Cocktail
- 1 oz gin
- 1 oz Campari
- 1 oz pomegranate juice
- 1 oz Vanilla-Cinnamon Simple Syrup
- ice to fill shaker
- sparkling wine to fill
- citrus peel twist (optional)
For Punch (Serves 15)
- 10 oz gin
- 10 oz Campari
- 24 oz pomegranate juice
- 7 on Vanilla-Cinnamon Simple Syrup
- 1 bottle sparkling wine
- thin slices of citrus (optional)
How-to
Make Vanilla-Cinnamon Simple Syrup
- Bring sugar & water to a boil over medium heat
- Remove from heat and add cinnamon stick & vanilla bean pod
- Allow to cool to room temperature then refrigerate at least a few hours to overnight
For 1 Cocktail
- Add gin, Campari, pomegranate juice and simple syrup to a dry shaker
- Filll with ice. Cap and shake vigorously, 10-15 seconds
- Strain into cocktail or wine glass. Top with sparkling wine to fill
- Garnish with a citrus peel twist (if desired)
For Party-Sized Punch Bowl
- To a punch bowl, add gin, Campari, pomegranate juice and simple syrup
- Stir to combine. Chill in refrigerator until right before serving
- When ready to serve, add sparkling wine to chilled punch
- Float thinly-sliced citrus slices (if desired). Allow guests to self-serve and ladle into punch cups
