Fruitcake Brandy Infusion

Ingredients

  • 2½ lb fruit cake (sliced & toasted)
  • 5 liters Fundador Brandy (or brandy of your choice)

Special Equipment

  • large jar (Eben uses an apothecary jar)
  • chinois, strainer or seive
  • cheesecloth

How-to

  1. Pour 5 liters of brandy in a large jar
  2. Cut a fruitcake into small pieces and toast until brown
  3. Immerse fruitcake pieces into the jar and let sit for 36 hrs, agitating every 12 hrs
  4. Strain brandy, remove solids and return brandy to jar
  5. Serve as is or in Eben's signature cocktail, Fruitcake Flip
