Mozzarella & Prosciutto-Wrapped Asparagus
Serves 4
Ingredients
- 8 asparagus spears
- 8 thin slices prosciutto
- 4 slices fresh mozzarella cheese (2 oz each)
- salt & black pepper
- 1 tbsp olive oil
- 1-2 tbsp water
How-to
- Bring a medium pot of water to boil
- Boil asparagus spears 1½ minutes
- Drain and transfer to a boil of ice water immediately to "shock" the spears and stop the cooking
- Remove from ice water, pat asparagus dry, and set aside
- Lay 2 pieces of prosciutto out flat, side-by-side
- Place one slice of fresh mozzarella in the middle of the prosciutto, and lightly press flat with your finger tips. Season with salt and pepper
- Add 2 asparagus spears and roll, wrapping prosciutto around the spears and cheese in a tiht bundle. Repeat with remaining ingredients
- Heat 1 tbsp olive oil in a sauté pan over medium
- Add bundles, cheese-side-down. Sear about 3 minutes. Season with pepper if desired
- Flip and add 1-2 tbsp water to the pan around the bundles. This will start to bubble and create steam. Allow to cook 10 seconds, before removing to a plate to serve
