Honey Mustard Chicken Nuggets
Ingredients
Chicken Nuggets
- 1 pkg boneless chicken breast, trimmed and cut into ½-1" pieces
Marinade
- 2-3 tbsp honey mustard
- 1 tbsp specialty honey mustard
- 2-3 tbsp grainy mustard
- salt & pepper to taste
- ½-1 cup dark beer (flavor of your choice)
- 1-2 tsp vegetable or canola oil (optional)
Breading
- ¼ cup breadcrumbs
- ½ cup cornflakes
- add the following herbs & spices to taste:
- dried oregano
- garlic powder
- dried basil
- thyme
- freshly ground black pepper
- onion powder
- pinch of salt
How-to
Prepare Marinade & Chicken
- Combine mustards, salt, pepper and beer in a bowl and mix well
- Cut chicken into ½-1" pieces and add to marinade
- Refrigerate & marinate 30 min
Prepare Breading
- In a shallow bowl add breadcrumbs
- Put cornflakes in a sealed plastic bag, crumble, then add to breadcrumbs
- Add herbs and spices and mix well
Bread & Bake Chicken
- Preheat oven to 350°
- Remove chicken from marinade and coat with breading
- Place chicken on foil-lined sheet pan
- Bake 25-30 min, checking for doneness
- Serve with Jessie's Honey Mustard Sauce
