Grilled Spicy Lamb Meatballs w/ Yogurt Dressing
Makes 12-16
Ingredients
Meatballs
- 1 lb ground lamb
- 2 cloves garlic, chopped
- 1 small shallot, chopped
- 1 tbsp cilantro, chopped
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp chili pepper
- salt & pepper to taste
- drizzle of extra virgin olive oil
Yogurt Dressing
- 1 cup plain yogurt
- 3 tbsp fresh lemon juice
- 4 tbsp white vinegar
- 1 tbsp sugar
- 2 tbsp extra virgin olive oil
- salt to taste
Dill & Red Onion Salad
- 4 sprigs of dill
- ΒΌ onion, shaved, soaked in ice water
- drizzle of extra virgin olive oil
- salt & pepper to taste
Special Equipment
- wooden skewers soaked in cold water for 15 minutes
How-to
Prepare & Grill (or Broil) Meatballs
- Mix all meatball ingredients and allow rest for 20 minutes
- Form 2 oz meatballs and place on a soaked wooden skewer. Grill (or broil) 3-5 minutes or until desired doneness is achieved
Make Yogurt Dressing
- Combine all ingredients and set aside
Plate & Serve
- Place a dollop of yogurt dressing on a plate and top with skewered meatballs
- Toss salad ingredients together and serve
