Grilled Spicy Lamb Meatballs w/ Yogurt Dressing

Makes 12-16

Ingredients

Meatballs

  • 1 lb ground lamb
  • 2 cloves garlic, chopped
  • 1 small shallot, chopped
  • 1 tbsp cilantro, chopped
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp chili pepper
  • salt & pepper to taste
  • drizzle of extra virgin olive oil

Yogurt Dressing

  • 1 cup plain yogurt
  • 3 tbsp fresh lemon juice
  • 4 tbsp white vinegar
  • 1 tbsp sugar
  • 2 tbsp extra virgin olive oil
  • salt to taste

Dill & Red Onion Salad

  • 4 sprigs of dill
  • ΒΌ onion, shaved, soaked in ice water
  • drizzle of extra virgin olive oil
  • salt & pepper to taste

Special Equipment

  • wooden skewers soaked in cold water for 15 minutes

How-to

Prepare & Grill (or Broil) Meatballs

  1. Mix all meatball ingredients and allow rest for 20 minutes
  2. Form 2 oz meatballs and place on a soaked wooden skewer. Grill (or broil) 3-5 minutes or until desired doneness is achieved

Make Yogurt Dressing

  1. Combine all ingredients and set aside

Plate & Serve

  1. Place a dollop of yogurt dressing on a plate and top with skewered meatballs
  2. Toss salad ingredients together and serve
