Crushed & Loaded Potatoes
Ingredients
For Spice Mix
- 1 tbsp cumin
- 1 tbsp ancho chile powder
- 1 tbsp cayenne pepper
- salt & pepper
For Garlic Butter
- 1 stick butter
- 1 tbsp minced garlic
- crushed red pepper (to taste)
- 1 tbsp chopped cilantro
Potatoes & Suggested Toppings
- red bliss potatoes
- chopped red onion
- diced tomato
- shredded cheese (Chihuahua & Monteray Jack blend suggested)
- hot sauce
- sour cream
How-to
Make Spice Rub
- Mix all ingredients together in a small bowl. Set aside
Make Garlic Butter
- Melt butter in small saucepan over medium heat
- Add garlic, red pepper flakes and cilantro
- Remove from heat and set aside
Boil Potatoes, Crush & Load
- Bring a large pot of salted water to boil
- Add potatoes (skin-on), and boil until fork-tender, about 8-10 minutes
- Preheat oven to broil
- Remove from water and allow to cool slightly (to the touch)
- Score each potato on the top. Using a clean kitchen towel, press down on the potato, crushing with the palm of your hand until slightly flattened
- Place on sheet tray, brush with garlic butter and sprinkle with spice rub
- Broil 10-12 minutes, or until golden and crusty on top
- Add chopped red onion, tomato and cheese. Broil 3-5 minutes, or until cheese melts
- Top with hot sauce and sour cream if desired. Serve immediately
