Bacon Stuffed Mushrooms
Ingredients
- 18-20 cremini mushrooms
- 8 bacon slices, finely chopped (reserve bacon fat after cooking)
- 2 tsp butter
- 3 scallions, minced
- ½ red bell pepper, minced
- 1 garlic clove, minced
- 1 cup sour cream
- ¼ tsp Worcestershire sauce
- salt to taste
- pepper to taste

Preheat oven to 350º

Wipe mushrooms w/ a damp cloth, remove stems and chop them finely

Cook bacon in a skillet until browned and drain on paper towels. Leave about a tablespoon of bacon grease in pan, add butter and let melt

Add the chopped mushroom stems, scallions, bell pepper, and garlic, stir until softened (roughly 5 minutes) transfer to mixing bowl and add remaining ingredients (sour cream, Worcestershire, salt, pepper) and mix

Stuff the mushrooms with the mixture and bake until browned, about 20 minutes
